I knew in 8th grade at O'Brien School in East Hartford that I wanted to be a DJ!

While watching the Food Network yesterday, I saw the Pioneer Woman make her take on Chicken Florentine. I didn't write everything down, but decided to try and make it for dinner last night. WELL - it was DELICIOUS!!!
Here's how I made it, you'll want to head over to the The Pioneer Woman on Food Network for her recipe.
I made this for 2 people, but this recipe could easily have fed 4 to 6!
In a large skillet or pan with deep sides, pour about 2 or 3 turns of your olive oil, enough to coat the entire pan, add about half stick of butter - let melt and heat up!
Add chicken to pan - you should hear it sizzle! Sprinkle with salt & pepper ( I also added red pepper flake)
START PASTA WATER/PASTA - use penne, rigatoni or ziti - I used 2 types to use up my pasta, I had penne and ziti left over
Turn chicken so it is brown on all sides, pretty much cook it through - while chicken is cooking chop as much garlic as you like - I used 4 cloves.
Remove chicken from pan, put in dish - ADD garlic to pan and about 3/4 cup of white wine to deglaze your pan, then add about a cup of chicken stock - I used low sodium. Scrape up bottom of pan and let simmer.
NOW - slice your cherry tomatoes in half - put in pan, add chicken back and literally open bag of spinach and put on top - it'll look like alot and almost too much - BUT IT'S NOT!
Put your pasta on top of the spinach, turn off the stove and mix all together!
THEN, I used a cheaper pick of parmesean cheese, I bought in a block, and used a vegetable peeler to shave the parm cheese into the mixture, stired - then did some more shavings on top for presentation!
THIS LITERALLY TOOK LESS THAN 20 minutes to make!!!!! YUM!!!
